Here is a delicious side dish, breakfast addition, snack, or any other time you wish, Tomato Salad. I think my favorite part is the marinated dressing that becomes flavored from all of the ingredients working together. There’s just this very unique and wonderful taste. For those of you eating bread, you may want to grab yourself a piece to dip into the completed salad. 🙂 You can also add this to plain pasta, rice, or quinoa, to create a pasta salad, rice salad, or quinoa salad, or just enjoy as is. This can be for 1 serving, or you can share. 🙂 Here we go…..
1 large tomato
1 handful of parsley, finely chopped
1 green onion stalk, sliced thin
2 teaspoons extra virgin olive oil (or vegetable oil, if you’re fasting)
2 teaspoons balsamic vinegar
a little salt, black pepper (freshly cracked, if you have it available), and a little dried oregano (add a pinch at a time, and mix well, until you like it, just be careful, because too much might make it bitter)
Mix ingredients together. Enjoy. Chill leftovers. 🙂
