The Spinach, Arugula, and Radicchio Omelette


Here is a very simple and quick meal idea for any time of the day. 🙂  For those of you who enjoy egg dishes, and want something new, I used a salad mix, but you can make your own mix with baby spinach, arugula, and radicchio. This is for one serving, and cooks in under 5 minutes. Here we go…..

2 eggs, beaten, with 1 tablespoon water

1 large handful of a combination of baby spinach, arugula, and radicchio

non-stick cooking spray

non-stick small omelette pan

freshly shaved/grated parmesan cheese

salt and cracked pepper

Your omelelette will cook very quickly (about 1 minute on each side). Spray pan with cooking spray. Heat on medium heat. Add your spinach, arugula, and radicchio. Do not mix in pan. Evenly spread your egg mixture on top. It should cook pretty quickly on the first side. Sprinkle with a little salt and cracked pepper. If possible, flip your omelette. If you’re unable to flip it, use your spatula to cut it in half or forths, and then flip over with spatula. It should cook pretty quickly, again, on the second side. Remove from heat and transfer to a plate. Top with shaved, or grated parmesan cheese. That’s it ! Enjoy!
