The Fat-Free Refried Beans
Step 1 - Spray non-stick pan with non-stick cooking spray. On medium-high heat, sautee 1 large yellow onion for about 7 minutes.
Step 2 - Caramelize onions until light brown and soft.
Step 3 - Add 8 cups of beans. Beans can be freshly cooked (1 pound beans, 8 cups water, 2 bay leaves, 1 tablespoon garlic powder, 1 tablespoon dried onions, cooked covered on medium high for 2 hours), or no salt canned red beans.
Step 4 - Mashed beans with onions with potato masher.
Step 4 - 2nd picture. Keep mashing beans.
Step 5 - Add 1/4 cup minced jalapeños.
Step 6 - Cook in medium high for about 5 minutes, continously mixing. Add 1 to 2 teaspoons salt (deoending on your taste buds). That's it! Enjoy with your favorite plain, Spanish, or Mexican rice, add to tortilla for a bean burrito, or enjoy as a bean dip for veggies or tortilla chips!
