Don’t Be Afraid To Substitute

We had some ripe bananas, like we usually do, at the end of the week, and I didn’t want to get rid of them. I wanted to make muffins for the family. I used a very popular recipe that was on-line, by Gold Medal Flour, and it called for white sugar and buttermilk. Like everyone, just because I cook, doesn’t mean I know everything about cooking. I learn as I go along in life. I researched what brown sugar was. It’s refined sugar, with molasses in it. The lighter, the lighter flavor, the darker, a stronger molasses flavor. So, what did I do? I substituted the light brown sugar, for the white sugar (because it’s the milder one, and I didnt want a strong molasses flavor) and I used milk for the buttermilk. Why am I sharing this info? In case you’re ever in the same situation, don’t be afraid to substitute. šŸ™‚
