The Cauliflower and Prosciutto Pancakes

Delicious and low carb! Yields 2- 4 servings. Here we go…..

The Cauliflower and Prosciutto Pancakes

Step 1 – Dice 2 cups cauliflower.

Chopped/cut cauliflower.

Step 2 – Add 1/3 cup cut or chopped Prosciutto.

Cut Prosciutto.

Step 3 – Add 4 large eggs.

Cauliflower, eggs, and Prosciutto.

Step 4 –  Add 1 heaping tablespoon dried chives and a dash of salt.

Step 5 – Add 1/2 teaspoon black pepper.

Step 6 – Beat well.

Step 7 – Spray non-stick pan with non-stick cooking spray, and warm on medium heat, then add 2 tablespoons of mixture. Cook for 1 – 1.5 minutes.

Step 8 – Flip over carefully, cook for 1 to 1.5 minutes, and as cauliflower starts cooking, it will become softer. Using your spatula,  start to gently press it down to flatten it.

Step 8 – Transfer to platter, and keep cooking the rest until done. Should yield 8 pancakes. Enjoy!!!
