Here is a delicious recipe to help use up some of that Swiss Chard with Caramelized Onions recipe, that I recently posted. This recipe is for 1 large or 2 small servings, and it starts off being cooked on top of the stove, but finishes cooking in the oven under the broiler. 5 minutes total cooking time, between the stove and oven. Here we go…..
1 stainless steel, or other oven safe pan, sprayed with non stick cooking spray
1 cup of The Swiss Chard with Caramelized Onions
2 large whole eggs, beaten, with 2 teaspoons water
salt and pepper to taste
To begin, set up your oven by bringing your rack low (but not lowest level). Preheat broiler in your oven. On stove, on medium heat, place 1 cup chard mixture, spread out evenly in your pan, thrn pour your egg mixture evenly. Cook 2 minutes. Remove from stove and place in the middle on a lower rack, and broil for 3 minutes. Carefully remove from heat, and place on stove to cool and cover hot handle with an oven glove or a kitchen towel wrapped around the handle (I can’t tell you how many times I have touched a hot handle). Losen omelette with a spatula around the rim of the omelette, and transfer to a plate. It should slide right out of the pan. That’s it! Enjoy! 🙂
