The Sautéed Swiss Chard with Caramelized Onions


I love shopping at my local farmers markets. In addition to having a booth of my own to showcase my gourmet breads, I am blessed to be able to find delicious, fresh, and nutritious veggies, such as these Swiss chard. This recipe will start out with alot of product ( 1 gallon (4 quarts) of coarsely chopped Swiss chard), which will quickly decrease to 1 quart! Yes, to 4 cups! Here we go…..

Step 1 – Caramelize 2 chopped medium yellow onions. In a large pot, pour 6 teaspoons vegetable or olive oil, and brown onions for about 5 minutes on medium heat.

Step 2 – While onions are cooking, cut Swiss chard into bite size pierces (put all stems facing one way, and cut about 3 times long ways, then cut your long strips into smaller pieces). Rinse well.

Step 3 – Add your Swiss chard to your caramelized onions, and sauté for about 5 – 7 minutes. Add 5 cloves of minced garlic, 1 teaspoon Kosher salt, and fresh cracked pepper. Cook for another 2 minutes. Remove from heat. Mix well.
