Here is a recipe that I put together, because I was trying to get rid of some extra ham that we had leftover from a holiday gathering. The rice HAS to be cold to fry it, or else it will become mush when fried. 🙂 This recipe is for 4-6 servings. Please remember to like, share, and rate this recipe. Thank you so much. Here we go……
4 teaspoons sesame oil
4 teaspoons vegetable or canola oil
4 cups COLD steamed rice (I used parboiled rice in this recipe, but long grain rice is awesome in this recipe, as well as cooked cold quinoa).
4 eggs, beaten with 4 tsp water, and scrambled in non stick cooking spray, or oil
16 ounces cooked ham, chopped into bite size pieces
4 green onion stalks, chopped
1/4 tsp turmeric (gives rice a little color, unique taste, and is anti-inflammatory)
salt, pepper, and soy sauce to taste
On medium high heat, warm oil in wok or non-stick skillet. Add everything, EXCEPT salt, pepper, and soy sauce. Stir fry for about 5 minutes. Season to taste with salt, pepper, and soy sauce. That’s it! Enjoy!
