Here is a recipe for those of you who love pepperoni, cheese, roasted chicken, and pasta sauce. This will give you 4 large servings, or 8 smaller ones. It can be enjoyed on its own, or with your favorite pasta, rice, bread, or salad. Here we go…..
Step 1- Preheat oven to 425 degrees.
Step 2- Slice 4 chicken breasts in half, long ways, making 8 pieces. Rinse well and place in roaster pan (something with a lid or cover).
Step 3- Season only top of each chicken piece with a little extra virgin olive oil, salt, Mrs. Dash Salt- Free Seasoning (it tenderizes the chicken), garlic powder, and 1-2 tablespoons of your favorite pasta sauce.
Step 4 – Pour remaining pasta sauce in between chicken pieces. Cover and bake chicken for 45 minutes.
Step 5 – Remove chicken from oven.
Step 6 – Top each chicken piece with 1 tablespoon of mixed Italian and Mexican cheeses, then place mini pepperoni pieces, or diced pepperoni, on top. Sprinkle a little dry or freshly snipped parsley on top. Bake, UNCOVERED, for another 15 minutes.
Step 7 – Check for doneness. Chicken should no longer be pink in the middle when cut. Remove from oven. The oil in the pan is mostly olive oil. You can either discard it, or put a little as your healthy fat on your pasta, rice, or bread. Let cool a few minutes and enjoy! ♡♡♡♡
