The Greek Style Turkey Meatloaf

Here is a delicious Greek Style Meatloaf, with some of the wonderful flavors so many of us love, known to Greek cooking. Between the mint, dill, and oregano, this meatloaf is great accompanied by the ever-popular roasted potato. I have a few recipes in my blog for roasted potatoes which will compliment this dish nicely. This dish will make about 8 servings. Some for today, and leftovers for tomorrow. Here we go…….

2.5 pounds of ground turkey

1 tsp each salt, garlic powder, dried oregano, mint, dill weed, and parsley

1/2 tsp black pepper

3 eggs

4 whole wheat pieces of bread, dampened with a little water and mashed together

4 teaspoons of extra virgin olive oil

Two 9 inch loaf pans, sprayed with non stick cooking spray

Preheat oven to 400 degrees. Blend all ingredients together using your hands. Evenly spoon meatloaf mixture into your two 9 inch loaf pans. Bake for about 1 hour. Remove from oven. If you have any white foam that came out of meatloaf, gently remove it. Carfeully transfer meatloaf to a dish or platter and slice. Keep covered until ready to eat. Meatloaf is delicious by itself, or enjoyed as seen here with roasted potatoes, or your favorite rice or pasta. Enjoy!
