The Pecan and Avocado BLT Salad with Creamy Balsamic Dressing

Here’s a different spin on the traditional Bacon, Lettuce, Tomato combination, that is loved by many. This can either be one large serving, 2 dinner salad servings, or 4 appetizer size salad servings. Here we go……

1 head butter lettuce, cut into small pieces

2 strips thick bacon, cooked, cut into small pieces

3 tablespoons cut pecans

pinch of sugar (or more, depending on your sweet preference)

1/2 small cucumber, peeled, seeded,  and chopped

8 grape tomatoes

1 small avocado, chopped

1 handful cilantro, coarsely chopped

cinnamon for garnish (sprinkle lightly, after you drizzle dressing)

In non stick pan, on medium heat, combine bacon and pecans with a pinch of sugar, and toss to coat well. Heat for about 5 minutes. Remove from heat.

Next, arrange all above ingredients the way you like. Now your salad is ready for the dressing.

Creamy Balsamic Dressing

2 teaspoons mayonnaise
2 teaspoons balsamic vinegar
2 teaspoons extra virgin olive oil
pinch of salt and sugar
cracked black pepper

Mix well and drizzle over salad, garnishing with cinnamon. That’s it. Enjoy! ♡♡♡♡
