The Grecian Broiled Omelette Pizza


Here is a delicious and low carbohydrate meal, packed with protein, iron, high fiber, abd vitamin c. This is for 1 serving.  Here we go….

heavy bottom, stainless steel pan or skillet (about 8 or 9 inches round)

non-stick cooking spray

2 eggs, beaten,  with 1 tablespoon water

1 cup baby spinach leaves

2 tablespoons crumbled Feta cheese

5-6 grape tomatoes,  sliced

salt, pepper, oregano

Pre-heat broiler for use later. Beat eggs with water.  Spray pan, cook eggs on medium heat for about 2-3 minutes. Remove from heat.  Add spinach, cheese, and tomatoes on top. Broil towards bottom half of oven, in middle of the rack, for about 3-4 minutes, watching closely. Edges should look lightly toasted. Carefully remove from oven and season lightly. (Don’t forget to wear gloves so the pan handle doesnt burn you). Loosen around the edges with a small spatula and transfer to a plate. That’s it! Enjoy!
