Pecan and Almond Fresh Fruit Salad

Here is a recipe for a refreshing, minty, vegetarian, Lenten, and fasting friendly fruit salad. This recipe will yield about 6-8 servings. You can alter the taste to your preference. Here we go. …..

4 gala apples, skin on, washed, core removed, cut into small pieces

2 bananas, sliced into small rounds

2 cups strawberries, washed, stem removed, cut into 4

7 tablespoons of crushed pecans and almonds, mixed with 2 teaspoons sugar, and 1/3 teaspoon cinnamon

3 tablespoons lemon juice (Start with a little, and add more as desired. The lemon will keep the banana and apple from browning,  and give a delicious flavor when mixed with the sugar and cinnamon).

1 teaspoon dry mint flakes, or 2 teaspoons minced fresh mint

Mix all ingredients together well. Enjoy. Store leftovers in refrigerator. Enjoy!!!

  1. Looks yummy and a bit different recipe for me, as I’ve never used pecan in a salad before, Will try it soon. Is it possible to use the jelly sauce instead of sugar? As my husband doesn’t like sugar in Salads.

    • Hi Seema. I learn as I go along, perhaps we can learn together how the flavors go with each other. Please let me know how you like it with the jelly. What about honey? Does he like that? That may also
      be a nice substitute since some fruit dips are made with cream cheese and honey. Good luck. Please keep me posted.

  2. Yesterday, I tried it with honey and it worked out great though you’ll find little flavor, but it goes along perfectly, thanks for a nice suggestion . Between I also found out that Honey with lemon juice also cuts the fat, so it becomes a 3 in 1 recipe being healthy, tasty and cuts out the weight.
