The Grecian Fried Rice

Hi there! I am so excited about this recipe. I blogged about it as I was making it, so please look at every step before you go shopping, so that you will gather all of the ingredients that you need. This is for 6-8 servings, and delicious as a vegetarian meal, a unique side dish, or enjoyed during Lent. The following steps to this recipe are posted with pictures. Remember to cook your rice first, and let it cool. Here we go……

Step 1 – Sauté 1 chopped yellow onion and 1 cup diced carrots in 8 teaspoons of extra virgin olive oil (or vegetable oil) in a non stick pan on medium high for 7 minutes. Add salt and pepper.

Step 2 – Add 1 cup frozen peas. Cook for another 4 minutes. Add a little more salt and pepper.

Step 3 – Add 1 can drained and rinsed green lima beans (or white). Sauté for another minute.

Step 4 – Add I can drained and rinsed quartered artichoke hearts (if children will be eating this dish, please be careful to remove the hard parts of the artichoke, and even go as far as cutting them into smaller pieces, or even avoid the artichoke when plating it for a small child), 2 tablespoons dill weed, and salt and pepper. Sauté for another minute. Remove from heat.

Step 5 – Your sautéed vegetables should look like this. Transfer to a large bowl or pan that will fit all of your rice together with veggies, when everything is done (don’t combine rice yet, just make sure you have a large enough pan). Wash out your non stick pan to now make your fried rice.

Step 6 – In your non stick pan, on medium heat, add 6 cups cooked and cooled long grain white rice and 8 teaspoons extra virgin olive oil (or vegetable oil). Separate rice and make even in pan and add salt and pepper. Sauté for 6-8 minutes.

Step 7 – Add 2 tablespoons dill weed, a little garlic powder, salt and pepper. Remove from heat.

Step 8 – Add 1/ 4 cup freshly squeezed lemon juice (juice of 1 large or 2 smaller lemons) to your vegetable mixture.

Step 9 – Gently toss your fried rice with your lemony vegetable mixture together. Congratulations. You’re done. Enjoy your delicious dish. ♡
