If you’re from the Southern part of the United States, then you have either hosted, or have been to, a Shrimp or Crawfish Boil event. This is where the water is highly seasoned with Cajun seasonings and spices, and ingredients, such as shrimp or crawfish are added, along with small red new potatoes, smoked sausage, and corn on the cob, and many more ingredients, depending on personal preferences. In this recipe, I just give you an “idea” of what I did, and this salad is for 1 or 2 people. The following are the ingredients that I used, but you can alter them to what you have on hand from your Shrimp or Crawfish Boil. 3 cups of cut and washed romaine lettuce
1 dozen medium sized peeled shrimp (or peeled crawfish)
1 small piece of smoked sausage, cut into small pieces
1 corn on the cob, with corn cut off of the cob (stand it up, and carefully remove corn with a knife, starting from the top, and bringing your knife down, cutting as much as you can near the cob, then use your hands to loosen the corn)
1 small new potato, skin on or off, cut into small pieces
your favorite Caesar salad dressing
freshly cracked pepper and paprika for taste and decor
1 tablespoon grated Parmesan and Romano cheeses
Arrange all of your ingredients in your favorite bowl or plate, and enjoy!!!!
