The Vegetable Brown Fried Rice

The Vegetable Brown Fried Rice. Great for fasting, as a vegetarian meal or side dish. Enjoy. 🙂

The Grecian New Orleanian

This side dish is delicious on its own, or as a fasting, Lenten, vegetarian, or “just because you like it” side dish. It’s made with left over brown rice (the rice has to be cold to be “fried”). Generally, fried rice has scrambled eggs in it, and sometimes poultry, beef, and/or seafood, but in this recipe, I only used vegetables. This will yield (6) one cup servings (giving you 1/2 cup cooked rice per person, 1/2 cup vegetable per person). Here we go……

1 large sweet onion, or white or yellow onion, chopped

1 handful baby carrots, diced, or 2 carrots, diced

3 teaspoons of vegetable oil

3 teaspoons of sesame oil

1 zucchini, washed and chopped into small pieces (taste a piece first, before cooking, to make sure it is not bitter)
