The Green Onion Sausage with Sweet Onion, Bell Pepper, and Garlic Puree


4 links green onion or Italian sausage

1 medium sweet onion, sliced

1 green bell pepper, seeds removed, sliced

1 red bell pepper, seeds removed,  sliced

4 garlic cloves, minced

4 tsp olive oil

1/2 cup water

heavy bottom skillet with lid

food processor, hand held immersion blender, or counter blender

Place all ingredients in skillet. Cover. Cook on medium/high for 15 minutes, or until center of sausage is cooked thoroughly. Remove from heat. Transfer sausages to plate. Using a spoon,  remove as much of the fat as you can. Transfer vegetables with all liquid to what you are going to use to puree them. Puree until smooth.  Serve sausage with sauce on side or on top.  That’s it! Enjoy!  ♡
