For those that love a good ole home made platter of some juicy, seasoned, delicious, roasted chicken, then get ready to dig in, because this blog is for you. So succulent and so easy to make, served with a side of my Rosemary & Garlic Roasted Potatoes (please visit my blog post) and Roasted Green Beans (which I will post later). A normal portion size of chicken is about as big as a deck of cards (or your palm), so use your judgement. For my family, I usually serve 2 pieces per person, giving them one leg and one thigh, or you can use the breast and wing. (Since there is much less meat on the wing, if possible, leave connected to breast, so it does not burn separated from the breast.
