The Roasted Green Bean recipe is a delicious side dish that can be enjoyed during fasting and non-fasting times. it has a hint of sweetness from the caramelized onions, while offering a lemony finish, which goes great with a seafood, beef, chicken, or poultry dish, or even enjoyed by itself as a meal. This will make about (4) 4 oz. side dishes, (2) 8 oz side dishes, or (1) large green bean fasting /vegetarian dish. Here we go…..
1 pound fresh green beans, rinsed, left long, with stem ends cut off and discarded
4 teaspoons vegetable oil (during fasting) or extra virgin olive oil (during non-fasting)
1/4 cup each of diced onion, celery, and bell pepper, OR 3/4 cup of already diced onion, celery, bell pepper blend from your grocer’s produce section
2 cloves garlic, minced, OR 1 teaspoon jarred minced garlic
juice of 1 lemon
1 teaspoon coarse sea salt
fresh cracked pepper
