This dish is inspired by my beautiful mother. She has made this for us since we were little, and it is one of my favorite dishes. This recipe can be enjoyed as a vegetarian dish, or it can be enjoyed as a delicious side dish, or main meal, by adding your favorite smoked sausage. I have added a few extra ingredients, such as fresh basil, parsley, and ground bay leaves, which I find heighten the already wonderful taste. This recipe will give you 5-6 large portions, or 10-12 smaller side portions. Here we go…..
Step 1- Saute’ vegetables in oil
1/2 large cabbage, diced (about 4 cups diced)
1 large onion, diced
2 stalks celery, sliced
6 teaspoons extra virgin olive oil (or vegetable oil, if you are fasting)
1 cup sliced carrots
leaves off of the bottom of the 1 cauliflower, chopped into small bite size pieces
