The Seasoned Baked Catfish with Lemon is a delicious, low fat, good for you, protein. Presented here, is a side of steamed vegetable medley, and a great compliment to the fish, The Tomato Basil Rice Pilaf (great for Vegetarians and for those fasting), which I will post the recipe for on my next blog. Here we go…..
2 pounds catfish fillets (or tilapia fish) (This recipe will give you about 8 oz., uncooked fish, per person, which will shrink a little after cooking. Depending on how many fillets you get, you may have to cut them to make sure each person gets even amount)
3 teaspoons extra virgin olive oil
1/2 teaspoon sea salt
fresh cracked pepper
1/2 teaspoon paprika
1/2 cup seasoning blend (found in your grocer’s produce section- has onions, celery, bell peppers, parsley)
1 1/2 lemons, thinly sliced
1/4 cup green onions, sliced or chopped
baking pan
