The Portabella Mushroom, Mixed Greens, and Sausage Scramble

I am always looking for a way to “spice up” my scrambled eggs, and I would love to share the following recipe with you. It is for 1 serving (or you can share). Here we go…..

1/4 chopped sweet onion

4 baby portabella mushrooms, chopped

Dash if garlic powder and pepper

1 serving (usually 2 small patties) pre- cooked pork or turkey breakfast sausage patties, chopped

2 eggs beaten with 1 tablespoon cold water

1 cup chopped spring mix greens

5 jalapeño slices, chopped (optional)

5 grape or cherry tomatoes , cut into fourths

1 tablespoon Mexican blend shredded cheese or shredded cheddar

Nonstick pan

Nonstick cooking spray

Spray your pan, and place on medium high heat.  Add your onions and mushrooms.  Sauté for about 5 minutes. Next, add your seasonings and sausage and sauté for another minute. Now it is time to add your eggs and scramble them until cooked and firm (about a couple of minutes). Finally, it’s time to add your greens, jalapeños,  and tomatoes,  and sauté another minute. Transfer to a plate and sprinkle with shredded cheese. That’s it. Enjoy! ♡
