The Imitation Crab Meat Salad


Here is a recipe that I came up with that can be used in many ways, such as on top of sliced cucumbers as an appetizer,  mixed with tour favorite salad greens as a light meal, combined with your favorite pound of cooked noodles for a creamy pasta salad,  or placed in your favorite crusty bread as a sandwich. This will yield 5 servings.  Here we go…..

Half pound imitation crab meat, cut into tiny pieces

1/2 sweet onion (or you can use regular white or yellow onion) finely chopped

2 celery stalks,  cut into tiny pieces

4 miniature bell peppers or 1/2 medium bell pepper, finely chopped

6 bread and butter pickle slices, chopped into tiny pieces

1 tablespoon dried chives (you can also use fresh chives or green onions)

Black pepper

2 teaspoons extra virgin olive oil

2 teaspoons white wine vinegar

4 tablespoons mayonnaise

Mix all ingredients together and serve or refrigerate with ideas listed above. Hope you like it as much as we did. ♡
