So delicious, so easy, and a child and adult favorite made in 5 minutes. Here we go…..
2 slices of your favorite bread
2 teaspoons unsalted butter
1/4 cup shredded Mexican blend cheeses (I used a package I found in my grocer’s dairy section that had Monterey Jack, Cheddar, Asadero, and Queso Quesadilla cheeses in it, but you can use any Mexican blend cheeses)
Non – stick pan or skillet
Place pan on medium high heat. Add 1 teaspoon butter. Place 1 piece of bread in skillet. Place cheese on bread. Top cheese with 2nd piece of bread. Toast for about 2.5 – 3 minutes, gently pressing top of sandwich to flatten a little. In another area of skillet, place your 2nd teaspoon of butter. Carefully flip sandwich over and place into melted butter area. Cook for another 2 minutes, flattening bread a little. Both sides should be nice and toasted. (Because some breads contain sugar, they may get toasted quicker than others, so please use your judgment. What we are looking for here are 2 things: the cheese to be melted and to have connected the 2 pieces of bread, and for the bread to be nice and toasted). Remove from heat and let rest a couple of minutes to cool. Filling will be hot. Enjoy sandwich as a whole, cut in half (pictured), or cut into fourths. ♡
