The Low – Fat Cheese Quesadilla

 

This is so easy and quick to make, and will keep the fat content of one of the most favoured foods of so many, to a minimum. Not many ingredients needed here, but much flavor and satisfaction, and I have to tell you, it is kid friendly, too (make sure they are cooled first, before serving, because filling will be hot !!!). This recipe is for 1 serving, but you can multiply as needed, depending on how many servings you need in your home. Here we go…..

  • 2 small flour tortillas (32 grams each), which are about as big as a soft taco or a small bean burrito
  • 1/4 cup of shredded Mexican cheese blend (may be found in your grocer’s dairy section), or a mixture of Monterey Jack, Mild Cheddar, Queso Quesadilla and Asadero cheeses
  • non stick cooking spray
  • non stick pan

Spray pan with non stick cooking spray, and warm on medium heat. Place 1 tortilla in pan, add 1/4 cup of cheese, evenly, onto your tortilla, and top with 2nd tortilla. “Toast” for about 2-3 minutes on each side, carefully turning over when a nice crispy color has been achieved (you will also notice when they are ready that your tortilla will slightly poof up a little). Carefully transfer to plate, and cut into 6 “pizza” slices or 8 “pizza” slices. FILLING WILL BE HOT, SO PLEASE LET COOL. That’s it !!! Enjoy !!!!
