The 10 Minute Chinese Noodles with Vegetables

Okay, are you ready? I needed a quick, fasting meal, for my husband, and this was created. Fast, easy, delicious, vegetarian, loaded with vitamins, and perfect if you are fasting. This will give you 2 servings. Here we go:

Step 1- Boil all ingredients listed in step 1 together on high heat.

  • 6 cups hot water
  • 1 large handful baby carrots
  • 1 large handful bite size broccoli pieces
  • 1/2 large zucchini cut into bit size pieces (taste it raw first to make sure it is not bitter, if it is, and you do not have another, then just do not use it and avoid this ingredient)
  • 1 tablespoon dried chopped onions, ORΒ  2 tablespoons chopped fresh onions
  • 1 vegetable broth bouillon cube (enough to season a 2 cup serving size of water or for less sodium, a 1 cup serving size of water; the cube I used was enough to season a 2 cup serving size of water, so I cut it in half to use half the sodium)

Step 2- Add your mushrooms and pasta to boiling water with vegetables.

  • 1 large Portobello mushroom cap, cut into bite size
  • 2 servings dry Chinese Noodles (the kind that cook in 3 minutes)

Step 3- Drain your noodles (do not rinse) and toss with the following ingredients:

  • 1 handful fresh cilantro, snipped or chopped
  • 1/3 teaspoon ginger powder
  • 1/3 teaspoon garlic powder
  • 4 teaspoons vegetable oil or sesame oil, OR a mix of both (no more than 4 teaspoons total)
  • 1 teaspoon Hoisin sauce

    • Hi Miss Elaine. The ones I found in the international section of my grocer are only made with wheat, water, and salt. They look like the ramen noodles, but they are by themselves, just the long noodles, no seasoning.
