The Tuna Skillet Sausage


Here is a recipe that I came up with that can be enjoyed on a salad, in a sandwich, in a warm pita bread, in a tortilla wrap, or anything else you can think of. It is a very unique flavor, and something different to try, and the if you let it cook to the consistancy of the little bit of crunch I find that it brings it to a whole other level. This is for either 1 or 2 servings. Here we go…..

(1) 5 ounce can Albacore tuna in water, drained

2 tablespoons mayonnaise

2 tablespoons fresh seasoning mix (an example of this mix is a combination of all or most of these- onions, celery, bell pepper, parsley, green onion)

6 whole wheat crackers, crushed between your fingers

2 tablespoons Italian blend shredded cheese ( mix of parnesan, Romano, mozzarella, and Asiago)

2 teaspoons lemon juice

a few twists of fresh cracked sea salt and fresh cracked pepper

a few dashes of hot sauce (less if you don’t want it too spicy,; more if you like it spicy)

non stick cooking spray

non stick skillet

Mix all ingredients well, except for spray. Spray your pan, and heat on medium for about 10 minutes, letting it cook, then breaking it up with a wooden spoon. You are looking for an almost crisy, ground beef texture. That’s it! Enjoy! 🙂
