I started this recipe blog, one year ago today, after I went to confession with our priest that week. My siblings and I were brought up to fast in preparation for communion, in a very strict home. Due to my insulin resistance, I have to have protein with every meal, which makes it very challenging for me during fasting times, and that is also why I post so many salads, because they help to balance my blood sugar. As I walked out of confession that week, and I was still on church grounds, it occured to me, I can not fast the way that I was brought up, but I can share my God given talent of cooking, with others, to help them achieve their fasting goals, while still trying to fast myself. I am not perfect….no one is, and so, this was a very big risk that I felt that I was taking in sharing my recipes with others that do not know me. In continuing, as I was leaving church, the name then occurred to me, I am Greek, and from New Orleans, therefore, The Grecian New Orleanian, was born. My very first blog post was baked french fries, which I am so embarassed by the pan that I posted it in….LOL, but that is okay, I have learned so much this past year, and I just wanted to thank you for being along for the ride.
