The 30 Minute Mixed Greens Roma Rice

Rice and greens are one of my favorite food combinations. I love lettuce and tomatoes, and this, to me, is just so delicious. This recipe combines vegetables that can be found in a salad, in another form, and mixed with already cooked rice, to speed up the cooking. The flavor is similar to The Spinach and Leek Rice recipe, which is lemony and mild, in flavor. I love the cooked tomatoes in this dish, because they are also very healthy for you and provide lycopene and antioxidants. This recipe is for 4 servings, and I have broken the recipe up into 3 easy steps. Here we go…..

Step 1- Cook 4 servings of rice (I microwaved the rice to speed up the cooking process, while I sautéed the vegetables, but you can also steam your rice, or cook it in your rice cooker).

1 cup parboiled rice

3 cups water

6 cup microwave safe container

In a microwave-safe bowl, place rice and water. Cook on high for 10 minutes, then cook on medium for 20 minutes. Whole process will take 30 minutes.

Step 2- While rice is cooking, saute’ your vegetables

1/2 cup chopped white, yellow, or sweet onion

1/8 cup celery, chopped

1/8 cup bell pepper, chopped

1 cup parsley, finely chopped or snipped with kitchen shears

4 teaspoons vegetable oil (if fasting), or extra virgin olive oil (if not fasting)

2 teaspoons dry crushed mint

2 teaspoons dry dill weed

4 cloves garlic, chopped

2 teaspoons Kosher salt

4 cups Spring Mix Baby Lettuces, cut with kitchen shears, to make them into small pieces (if you can not find an already made container of these lettuces, some lettuces that you may use are a combination of any of these baby whole leaf varieties: green leaf, mizuna, green romaine, tango, green oak, green chard, baby spinach, arugula, frisee, tatsoi, mache, red chard, red leaf, lolla rosa, red romaine, red mustard, radicchio, red oak, beet tops)

4 Roma tomatoes, with skin on, chopped

6-8 teaspoons lemon juice

In your pan, on medium heat, saute’ your onions, celery, bell peppers, and parsley in oil for about 5 minutes. Next, add your mint, dill weed, garlic, salt and pepper. On this next step, you will notice your greens will decrease in size very quickly. Add your mixed greens, and saute’ until soft, about 3 minutes. Finally, add your tomatoes and lemon juice, and saute’ for another 5 minutes, or until the tomatoes are softened.

Step 3- Combine rice and greens and mix together. You can also garnish with extra lemon and fresh cracked black pepper for an extra special treat. Enjoy !!!!
