Beef Tenderloin Teriyaki tossed with Stir Fried Vegetables and Rice Noodles

Oriental food is one of our favorites here in our home. Oh what a delicious meal this is. The tender beef, the delicious vegetables, the lovely noodles….all of these are food for the soul, while providing lots of wonderful vitamins for your body. I broke this recipe up in steps, because I find it makes it easier when cooking a dish like this. This recipe is for 4-6 hearty servings. I hope you make this and enjoy this dish as much as we did. Left overs taste delicious, too. Here we go………

Step 1- Stir-Fry all below ingredients in this step until vegetables are cooked, but not soggy. Put into a large bowl, or on a platter, clean your pan, and go on to step 2. 

1 head cabbage, chopped
1 onion, chopped
1 cup carrots, sliced in a bias (sideways)
1 handful cilantro, snipped
1 inch piece fresh ginger, finely diced
1 cup portabella mushrooms, chopped
1 thinly sliced red bell pepper
2 teaspoons sesame oil
2 teaspoons canola oil

Step 2- Scramble 2 eggs. (Crack your eggs into a cup. Add about a tablespoon of water. Beat with fork. Spray your pan with non stick cooking spray. Mix eggs while cooking, tossing gently to break them up. Season with salt and pepper. Remove from pan, and add to vegetable stir fry. Clean your pan, and move to step 3.

Step 3- Dice 16 ounces (1 pound), beef tenderloin,  and toss well with about 1/8 to 1/4  cup terriyaki sauce, 2 teaspoons sesame oil, and 2 teaspoons canola oil. Lightly season with salt, pepper, ground ginger, and garlic powder. Cook until beef is browned. Remove from heat, and add that to the vegetable stir fry, too.

16 ounces (1 pound) beef tenderloin

1/8- 1/4 cup low sodium terriyaki sauce (depending on your taste buds)

2 teaspoons sesame oil

2 teaspoons canola oil

salt, pepper, ground ginger, garlic powder

Step 4- Cook 4 servings of vermicelli rice noodles (that is thin, long, stringy, noodles) according to directions. Once cooked, add that to the beef and vegetable stir fry, toss well, and season with soy sauce. Enjoy !!!!
