The Super Nachos Salad

For those of you who love nachos and salad, this is sure to please your palette. The bottom, filled with tortilla chips, nacho sauce, and taco meat, then topped with a delicious mixed herb salad, Roma tomatoes, chopped white onions, shredded cheese,  jalapenos, and avocados……delicious, filling, and satisfying. Great as a large salad entrée’ for 4 people, or split into 8 or 16 servings as an appetizer for a gathering. Either way, I hope you make these and enjoy them as much as we do. Here we go……

1 pound lean ground beef (or chicken or turkey), browned, mixed well with 1 serving The Taco Seasoning (please visit my recipe blog on this)

4 servings of your favorite nacho cheese

8 cups herb salad mix (with cilantro), or mixed greens (and add cilantro), chopped or cut with kitchen shears or scissors (this will decrease the amount to about 4 cups once everything is cut up)

4 Roma tomatoes, or 4 other medium tomatoes, diced

1 onion, chopped

pickled jalapenos, chopped

2 avocados, cut in half, seed removed, and scored (carefully cut lines into the avocado going up and down, and left to right, and then scoop it out and this will give you little rectangle  or square pieces)

4 ounces (total) shredded Colby and Monterrey Jack cheeses, or Cheddar

salt and pepper

non stick pan

pan or bowl to warm nacho sauce

4 large dinner plates

In this recipe, it is important to have all of your toppings ready first, and then we will assemble the salad. This way, the nachos will be fresh, and not get soggy from the cheese, and your cheese will be nice and warm and so will your meat. Brown your ground meat first on medium heat in a non stick pan and mix with The Taco Seasoning recipe from my blog. While that is cooking, start preparing all of your toppings. Warm your nacho cheese sauce. Next, arrange 1 serving of tortilla chips on each plate. Start to build your nachos by adding the nachos sauce first, then split the ground beef between the 4 plates. Now it is time to start making the salad portion of the nachos. On top of your ground meat, split all of the rest of your toppings, and add some of the mixed greens, tomatoes, onions, jalapeno, avocado, shredded cheese, and top with a little salt and pepper. That’s it !!!! Enjoy with a fork, or with your hands, by picking up one nacho chip at a time, and loading it with the goods. 🙂 Please feel free to share this recipe blog with your family and friends, and like it on Facebook.
