This delicious protein is juicy, sweet, and salty, and makes for a great sandwich, or chicken salad. You need some time to let it sit in the salt and sugar solution, but it is worth the wait. This recipe is for 6 chicken breasts. Here we go…..
6 boneless, skinless chicken breast
2 cups water
1/3 cup Kosher salt
1/3 cup sugar
6 teaspoons extra virgin olive oil
Mix water, salt, and sugar, and stir well. Place chicken in solution and refrigerate for 2 hours. Drain chicken. On medium high heat, warm oil in non-stick pan. Place chicken breasts in pan and cook for about 20-25 minutes on each side, or until no longer pink in the middle. Remove from heat and let cool. If available, a great way to slice chicken is with a santoku knife, on a bias, giving you that “deli meat look”, or you can use a regular knife. That’s it !!!! Enjoy !!!
