Well, I just don’t know what to say……these are my weakness? I LOVE green tomatoes, and I am so happy to share this recipe with you. I cook one tomato per person, therefore the serving size of this recipe depends on how many folks you are feeding this appetizer (or side dish) to. The Pan Seared Green Tomato is perfect if you are fasting, a vegetarian, or if you just enjoy green tomatoes, such as myself. After they are cooked, they just have this amazingly delicious lemony taste, yet there is no lemon in this recipe. Here we go…..
1 medium green tomato per person, sliced into 1/2 inch rounds
non stick pan
nylon tongs or spatula to flip over tomatoes
Pour a little bit of oil into the bottom of your pan (only enough to cover a small amount of your pan, and roll the pan around th make sure a little oil covers each part) and place on medium heat. Place cut tomatoes, in a single layer, into your pan, and salt and pepper one side. Cook for about 6 minutes, then flip over and cook for about 3 minutes. Flip tomatoes back over and cook for another 2-3 minutes. What you are looking for is a beautiful toasty brown color on both sides. That’s it !!! Let cool, and enjoy !!!
