Sometimes, you just want something simple to go on the side of any meal, or to just enjoy a simple salad with not too many ingredients. In this delicious salad, you will only use 6 ingredients, and it is ready in a few minutes. It is also great during fasting periods, and as a vegetarian meal. This recipe is for 1 large salad serving, or 2 smaller servings. Here we go…..
1 medium tomato, sliced into wedges
1 medium cucumber, peeled, cut in half lengthwise, and seeds scooped out, then cut into small slices
1 teaspoon vegetable oil (or if not fasting, use extra virgin olive oil)
2 teaspoons red wine vinegar
fresh cracked black pepper
sea salt, used sparingly across top of salad
Combine all ingredients, and toss well. Serve with your favorite crusty bread for dipping. Enjoy !!!!
