The Vegetable Stir Fry Egg Foo Young

Wondering what to do with some of that leftover vegetable stir fry? Well, look no further. Add some eggs, mix together, use non stick cooking spray, and cook up some delicious Egg Foo Young. Please visit my recipe blog titled “Egg Foo Young Sauce” for a delicious brown sauce to go on top. This is for 3-4 servings. Here we go…..

1 cup of my “The Vegetable Stir Fry” recipe (if vegetables are big, then you can use kitchen shears or scissors to cut vegetables into tiny pieces to help them stick better to the egg mixture when being cooked)

6 large eggs, beaten

non stick cooking spray

non stick pan or skillet

spatula

tablespoon

1 recipe from my blog titled “The Egg Foo Young Sauce” 

Mix beaten eggs with 1 cup stir fry. Spray your non stick pan with non stick cooking spray (carefully spray your pan with cooking spray each time you pour some egg mixture into the pan, and please be careful not to use spray directly on fire, if you have a gas stove, so you don’t burn yourself), and heat pan on medium heat for a couple of minutes.  Spoon 4 even spoonfuls into your pan, away from each other. Using your spatula, “push” the egg mixture as it starts to run, into an even circle as much as you can to give it a nice shape. Cook for about a minute on each side, or until nice and light brown. Transfer to your plate, and continue spraying and cooking, until all of your egg mixture is gone. Top with sliced green onions, and Egg Foo Young Sauce. That’s it !!! Enjoy !!!
