The Cilantro Lime Butter

Here is a delicious home-made flavored butter that can be used as a spread with bread, melted and poured over rice or pasta, or even served alongside your favorite protein as an extra flavor enhancer, such as with steak, shrimp, chicken, or my recipe blog post, The Cilantro Lime Pan Seared Pork Chop. I added extra virgin olive oil in this recipe for easy spreading when cold, which increases the serving size to 28 servings (1 stick of butter has 24 servings, and when we add the olive oil, it will increase to 28 teaspoons). A serving of real butter is one teaspoon, so please consider that when cooking or serving yourself and/or others. You can make this and leave it in your refrigerator, covered, so don’t be intimidated by the amount. Here we go…..

1 stick of real butter, not margarine, unsalted

1/4 teaspoon sea salt

black pepper

juice of 1/2 lime

4 teaspoons extra virgin olive oil

1 small handful of cilantro, finely chopped, or snipped with scissors

small sauce pan OR microwavable bowl

To warm on stove, place all ingredients, except oil, in sauce pan, and warm on medium heat until butter is melted. Do not leave pan unattended. To microwave, place all ingredients, except oil, in microwavable bowl and warm on high for about 45 seconds, or a few seconds longer, until liquid consistency. Remove from microwave or stove, add oil, mix well, and use right away as a melted butter, or place in a nice serving bowl and put into refrigerator, covered, to become solid again. That’s it !!!
