The “No Lettuce” Veggie Salad

I love mixed greens for my salad, but every once in a while, I like to change it up a bit, and go straight for the crunchy veggies. in this recipe, I combine a bunch of fresh vegetables, and a balsamic vinaigrette dressing. Don’t skip the cilantro, because it really brings the salad together for a unique and refreshing taste. This recipe is for a serving of four. Here we go…..

4 Roma tomatoes, cut into 8 pieces each

2 celery stalks, thinly sliced on a bias (sliced sideways)

1 large cucumber, cut long ways, seeds scooped out, then sliced into half moons, or half of a half-moon

1 large carrot, using a vegetable peeler, “shave” the carrot to create “strings” of the carrot

2 green onion stalks, cut into small pieces

1/2 green bell pepper, cut into bit size pieces

1 handful of cilantro, chopped into small pieces

4 teaspoons extra virgin olive oil (use vegetable oil if fasting)

4 teaspoons balsamic vinegar

1/2 teaspoon sea salt

fresh cracked pepper

Place all ingredients above in a salad bowl, and mix together. That’s it !!! Enjoy with your favorite meal.
