Here is a cooling and refreshing salad, with a combination of two flavors: the tuna salad with mayonnaise dressing, and the mixed greens with cilantro lime dressing. Delicious and perfect for a light meal or appetizer salad. This recipe is for 1 large serving, or 2 appetizer servings, however, you can adjust as needed. Here we go……
Step 1- The Tuna Salad
1 serving Albacore tuna, drained
2 teaspoon mayonnaise
1 teaspoon yellow mustard
fresh cracked black pepper
dash of paprika and onion powder
1 green onion stalk, sliced thin
1/2 celery stalk, cut into small pieces
Mix all ingredients together, and refrigerate, until your greens and dressing are ready, and you are ready to put your salad together.
Step 2- The Mixed Greens Salad
3 cups mixed greens
1 Roma tomato
1/2 large cucumber, washed, cut in half long ways, seeded with a spoon, and sliced thin
1/2 celery stalk sliced thin on a bias (sliced side ways)
Place all ingredients in a plate or bowl, and scoop your tuna salad in the middle.
Step 3- The Cilantro Lime Vinaigrette Dressing
1/2 cup of vegetable oil ( or during non fasting times, use extra virgin olive oil)
1 tablespoon fresh cilantro, finely chopped
Juice of 2 freshly squeezed limes
1 garlic clove, finely minced, or 1 teaspoon of minced jarred garlic
1/8 teaspoon salt (optional)
1/8 teaspoon cracked pepper ( optional)
