The Chorizo Mexican Pizza

When my husband, and little one, tried this Mexican Pizza, they told me “You are not going to BELIEVE how good this is……”, and there it was my friends, I just HAD to add this on here for those of you that enjoy a little Mexican treat. What really compliments this pizza is the Guacamole that you eat with it (recipe found in my recipe blog using the search button, typing in guacamole). This recipe will make 4 Dinner Size Mexican Pizzas (whole pizza per person) or serve 8 Appetizer Size Mexican Pizzas (1/2 Pizza per person), or even 16 Party Snack Size Mexican Pizzas (1/4 Pizza per person). Here we go……

1 pound Chorizo sausage, casing removed, or squeezed out of casing, browned, with 1/3 cup water, on medium heat, about 10 minutes, breaking it up to look like ground beef

4 ounces Monterey Jack cheese, shredded

4 ounces Cheddar cheese, shredded

8 whole wheat flour tortillas

green onions, thinly sliced, for garnish

non-stick skillet or pan


Guacamole for putting on pizza as you eat it

First of all, make sure all of your ingredients are ready, because you will be working quickly assembling and cooking your pizzas, and you don’t want them to burn. Heat your non-stick skillet or pan on medium heat. Place tortilla in pan, and spread a combination of 1 ounce of your cheeses on the tortilla, then add 4 ounces of your meat, then top with another ounce of a combination of your cheeses, and place 2nd tortilla on top. Cook about 2 1/2 minutes on each side, carefully flipping the pizza, so you don’t burn yourself, or break the pizza. You are trying to achieve a nice and crispy tortilla. If you need to leave it on for a few more seconds to get a little more crispier, please use your judgement so it does not burn. Remove from heat to a plate, and carefully cut into pizza slices.
