The Skillet Hot Legs

Just like one of America’s favorite appetizers, the chicken wing, The Skillet Hot Legs is an alternative to the popular, sometimes fried, and over buttered, chicken favorite. In this version, I used a less expensive chicken piece, the leg, and cooked it in a skillet, with just a little bit of butter, per serving (2 legs), controlling the fat content, but still making it taste delicious. As you can see from this picture, the chicken is nice and steamy, and well seasoned. You can choose to dip your chicken in ranch or blue cheese salad dressing or dip, or just enjoy as is. You do have to be a little “hands on” with this recipe, and turn your chicken every few minutes, but the outcome is delicious and juicy chicken. Hope you enjoy it as much as we did. Here we go……

chicken legs, bone in, with skin

sprinkle each piece sparingly with the following seasonings:

salt, pepper, garlic powder, paprika

1 teaspoon butter, per person

your favorite hot sauce

non stick skillet

aluminum foil (this will keep your chicken nice and moist and juicy)

heavy plate (since chicken legs are so round on one end, this will “press” them down for quick and even cooking)

tongs (this will help you with flipping your chicken legs and at the end when you put hot sauce on them to evenly coat them)

Wash and season all chicken pieces. In a non stick skillet, on medium high heat, lay your chicken pieces in a single layer. Scatter little pieces of your butter all over skillet. Brown chicken for 5 minutes, then turn, and brown on other side for 5 minutes. Turn chicken back over. VERY CAREFULLY cover skillet with aluminum foil, and place your heavy plate on top, and cook chicken for 10 minutes. VERY CAREFULLY, with tongs and oven gloves or kitchen towel, remove the plate and aluminum foil, being careful that the steam does not burn you. Turn chicken over, and cook for another 10 minutes, replacing foil, and plate on top again. Remove plate and foil, and sprinkle desired amount of hot sauce on each piece of chicken, turning each piece in the pan to evenly coat it with the melted butter and hot sauce.
