The 15 Minute Grecian Chop

This is one of my favorite things to enjoy, with a nice bowl of steamed broccoli and carrots. They cook in under 15 minutes, and they are DELICIOUS and FULL of flavor. This is for a serving of 4, and below all I do is give you the seasonings and cooking time, so you adjust this recipe to however many you are feeding. Here we go……

4 center cut pork chops, bone in, about 3/4 inch thick

extra virgin olive oil (1 teaspoon per person, per chop)

lightly sprinkle the following seasonings onto both sides of your pork chop: 

kosher salt (I believe this is what makes it tender and juicy, so try and use this salt, if possible)

black pepper


onion powder

garlic powder

ground bay leaves

dried oregano

non stick pan

After you have seasoned your pork chops, with your fingers, “press in” the seasoning into the meat. On medium heat, warm your non stick pan for a couple of minutes, and add your oil. Make sure to swirl the oil around a  little to coat the pan. Place each chop, carefully, into the pan, and cook EACH side for 5 minutes, or until no longer pink in the middle. (I cut the thickest one in the middle to make sure it is ready). Remove from heat, and let them rest for a few minutes on a platter. They will be delicious and juicy. Do not overcook them, or THEY WILL dry out.
