The Beef Roast with Roasted Vegetables

In this delicious recipe, the carrots and sweet onions are the magic that bring this whole delicious meal together with such a sweet taste, and very flavorful. This is perfect for a large family, or for a nice Sunday dinner, or for a nice little gathering. You can always store left overs in the refrigerator for enjoying the next day. This recipe is cooked in the same pan in the oven, but is in 2 steps, and is made for 8 servings. Please feel free to cut the recipe in half to make it for 4 servings. Here we go……

Step 1- Prepare the vegetables.

6-8 medium potatoes, peeled, washed, and cut into fourths

4 cups carrots (I used the mini carrots that are already cleaned and peeled)

1 large sweet onion (every area has their own sweet onions, so I used what we have down in the south, which is Vidalias)

1 large celery heart, washed, and sliced into one inch pieces

8 teaspoons olive oil

kosher salt  (shake sparingly all over the top of the roast, and all over the vegetables)

pepper (shake sparingly all over the top of the roast, and all over the vegetables)

paprika (shake sparingly all over the top of the roast, and all over the vegetables)

2 cups water

very large baking pan with cover, or aluminum foil

Preheat oven to 425 degrees. Place all above ingredients in your pan and toss well to coat. Next, we are going to add the beef roast.

Step 2- Prepare the beef roast.

2 pounds beef roast (I used top round in this recipe, with very little fat on it)

kosher salt  (sprinkle sparingly all over the top of the roast)

pepper (sprinkle sparingly all over the top of the roast)

onion powder (sprinkle sparingly all over the top of the roast)

garlic powder (sprinkle sparingly all over the top of the roast)

paprika (shake sparingly all over the top of the roast, and all over the vegetables)

Make a nice well in the middle of your pan, and place your roast in there. and cover the top of your beef roast with the above seasonings in Step 2. Cover,and cook for 2 hours. Remove from oven and check your roast for doneness.  Once it cools, enjoy !!!! Oh, and don’t forget to sip some of that delicious stock that was released from the vegetables and the roast…..it is delicious !!!!!
