The Salmon Portabella Canapes

Here is a delicious way to combine a couple of my recipes into one appetizer. The appetizer itself only takes a few minutes to put together for a gathering, or to enjoy for yourself and/or your family, however, there is some prep that needs to be done first in order to get to that point. You can have your toast squares ready ahead of time. as well as your other ingredients, such as The 15 Minute Broiled Salmon, The Roasted Garlic and Basil Aioli Sauce, and The Roasted Portabella Mushroom. This is how I came up with this…LOL….I had all of the ingredients already made, and on hand, except the toast squares, and it only took a couple of minutes to make this lovely platter of 16 appetizer pieces. By the way, this is using high fiber bread, and if you were to eat a sandwich, you would technically have 8 pieces to a serving, because that is 2 pieces of toast, and then protein and veggies are on there, as well as your fat, so, you are just enjoying a sandwich in another way. Here we go……

2 pieces whole wheat, high fiber bread, per person, each bread cut into 4 even squares, and toasted in a 350 degree oven, in a single layer, for 10 minutes

The Roasted Portabella Mushroom, cut in half, then into fourths, then into thin slices (I used about a teaspoon size mushroom per square toast)

1 mini cucumber, cut into thin slices (or 1/2 English cucumber, cut into thin slices)

The 15 Minute Broiled Salmon (leftovers I made sure I had about a teaspoon per toast)

The Roasted Garlic Aioli Sauce (only use about 1/3 teaspoon on each toast square)

fresh basil leaves, snipped with kitchen shears, on top of each appetizer

Arrange square toasts on your serving platter or dish. Place mushroom first, then cucumber, then salmon and small dollop of aioli sauce, and top off with fresh basil. That’s it !!! Enjoy !!!!
