When you want a little Greek food, and don’t have time for it to marinade, or to put it on skewers, how about this? The 15 minute Pork Souvlaki, which can be eaten on pita bread with tzatziki sauce (search my blog for my recipe), just like a traditional Souvlaki, or like it is pictured here, as a dinner entrée’, along side The Grecian Rice Pilaf (which I will be posting soon) and steamed assorted squash. Each serving is about 3 oz, so one pound of pork, will yield about (4) 4 ounce servings (consider that some fat will melt away). Here we go……
4 ounces of meat per person, OR one pound of pork stew meat
fresh cracked pepper
ground bay leaf
extra virgin olive oil
juice of 1/2 lemon
baking pan, with sides
Preheat your broiler on high. In your baking pan, arrange your pork stew meat in a single layer. Beginning with one side of your pan, lightly sprinkle a little bit of each seasoning listed above, until you get to the other side of the pan, making sure there is a little bit of seasoning on each piece (watch the salt, though, so you don’t make it too salty). Next, depending on how many people you are feeding, use one teaspoon per person of extra virgin olive oil. Mix everything together, and place on middle rack of oven, in middle of even (not too close to the top so your broiler won’t burn your meat). Cook for 12-15 minutes, stirring once during cooking. Remove from oven, and sprinkle with fresh lemon juice. That’s it !!!! Enjoy !!!!
