Now, I have to say, I just literally stumbled across this, and made it up, and my when my little judge (my little one) liked it, and my hubby, I knew I had to post it. We all enjoy Mexican food in our home, and so, here is a recipe that is delicious, and goes a long way, especially if you are feeding several folks in your family, or at a gathering. This recipe will give you 4-6 servings, or, if served at a gathering, give you about 8-12 smaller portions. There are 2 steps to this recipe, one being to make your rice, and the other, to make your taco seasoning and meat. Here we go…..
Step 1- making your rice
3 cups water
1 cup chicken broth
(1) 10 ounce can MILD diced tomatoes with green chilies
2 tablespoons vegetable oil or canola oil
2 cups parboiled rice
1 large can (about 19.75 ounces OR 1 pound 3.75 ounces) can whole black beans, drained
2 quart sauce pan with lid
Place water, broth, tomatoes, and oil, in your pan, and bring to a boil on medium heat. Add your rice, reduce heat, to low, and cook for about 20-25 minutes, or until all liquid is gone. When done, add your can of beans, and mix well.
Step 2- making your taco meat
1 pound of ground beef
3-6 teaspoons of The Home Made Taco Seasoning (please check my recipe blog), or 1 taco seasoning packet (use 3 teaspoons if you prefer less sodium, or the higher amount if you want it saltier)
non stick skillet
In your non stick skillet, place ground beef and seasoning, and cook until browned, on medium heat, adding a little water, if needed. If your beef extracts oil, once you are finished cooking it, turn your heat off, and tilt pan to the side, and using a coffee cup and spoon or ladle, and carefully discard any fat. Add your taco meat to your rice and beans, and a little and there you go. Enjoy !!!! (You can add salt and pepper for taste, after you have cooked it, and mixed well. Because canned goods vary in sodium, I add it to the end of my cooking, only if needed. Please use your judgement).
