When we were growing up, my parents would sometimes make sausage in this manner, which is absolutely delicious. Now, my family and I enjoy it once every few months. It is very easy to do, yet so satisfying with grits and eggs on the side. You boil the sausage of your choice (smoked sausage, beef sausage, pork sausage, or green onion sausage) until done, then slice it, and brown it with lemon. If you follow my blog, you know I try not to cook with nitrates because they are so unhealthy for you, so if you can find a sausage without the nitrates, even better. Here we go…..
1 pound sausage per person (in this picture, we used the Winn Dixie Supermarket “made in store” sausage)
4 tablespoons lemon juice OR 1 large freshly squeezed lemon ( we prefer it lemony, and if you do, too, you can add a little more)
non stick pan with lid
non stick cooking spray
In your non stick pan, add sausage. Pierce each sausage a couple of times with knife or fork to release any steam as it is cooking. Add enough water in pan to cover sausage. Place lid on pan, and cook on high heat for 15 minutes (reduce heat to medium high if it starts boiling too much). Remove sausage from heat, and place on cutting board and slice into rounds. Discard water, and wash and dry pan. Spray pan with non stick cooking spray, and put sausage back into pan. Saute’ on medium for about 5-10 minutes, or until sausage gets brownish and just a LITTLE crispy looking (that is the lemon caramelizing the sausage). Remove from heat, transfer to a serving platter, and let cool. That’s it. Enjoy !!!!
