The Greek Salad

Greek Salad is one of the most popular salads, in my opinion, at many restaurant establishments that offer it, in homes, and at Greek Festivals around the world. Of course, everyone has their own version, and on this recipe blog, this is my version, that my family enjoys, and I hope you do , too. This recipe will yield two large dinner size portions, or 4 small appetizer size portions. Here we go…..

5 cups of mixed greens, cut into small pieces with kitchen shears or scissors

handful of grape (or cherry) tomatoes, cut in half

1 mini cucumber (or regular cucumber), skin on, sliced into thin rounds

1/4 medium red onion, sliced into thin rounds

1/4 red bell pepper, sliced into thin strips

1 green onion stalk, thinly sliced

1 small handful parsley, finely chopped

2 tablespoons kalamata olives, pitted, and sliced 

3 tablespoons of crumbled feta cheese

Layer all of your ingredients in a bowl, and drizzle with The Red Wine Vinaigrette Dressing (please check my blog for recipe). Enjoy !!!!
