The Rosemary Garlic Roasted Chicken

As you can see by now, we just LOVE chicken in our home. This recipe is made by marinating the chicken in a garlic brine first, and then baking it for an hour, resulting in a very tender, juicy, and delicious chicken. It is made with 2 steps. This will give you 8 servings, which I place the left overs in my refrigerator, and I make chicken salad with it later on. A good accompaniment to this chicken, is one of the baked potato recipes on my blog. You can find them easily by using the search button on the bottom left of my page and type in “potatoes”. Here we go….

Step 1 – Brine your chicken.

8 cups water

3/4 cup Kosher salt

3/4 cup sugar

4 tablespoons garlic powder

4 breasts, with wing attached, skin on (or 4 breasts and 4 wings)

4 thighs, with legs attached, skin on (or 4 thighs and 4 legs)

Step 2- Prepare chicken for roasting.

drained and rinsed chicken pieces

paprika

fresh cracked pepper

fresh or dried rosemary

roasting pan, with sides

Preheat oven to 400 degrees. Season each top and bottom chicken piece with paprika and pepper. Finish with sprinkling rosemary on top of each piece, skin side up. Bake for about 50 minutes to 1 hour. Your skin should be nice and brown and crispy looking. Remove from oven, let stand for a few minutes to cool. Serve chicken with au jus (juice from chicken) for dipping. Absolutely delicious dipping sauce !!! Enjoy !!!
