The Crab Meat Appetizer

This is one of my dad’s favorite salads that he used to love to eat during fasting times, that can be eaten as an appetizer, with your favorite sliced French bread or pistolette, or as a meal for one person. Since this recipe is for one person, it can be split into four appetizers (or multiply recipe as needed). This is easy and delicious. Here we go…..
4 oz. fresh crab meat (about 1/4 cup is one serving for one person, or for an appetizer, split into 4)
Note: The lump crab meat is a little more expensive, but hardly has any shells in it, which is worth the extra money spent to make this. Also watch your hand picked and machine picked crab meats. In my experience, the machine picked has an odor, where as the hand picked is lovely.
1/4 cup parsley, coarsely chopped
1 green onion stalk, sliced
1 teaspoon vegetable oil (extra virgin olive oil if not fasting)
juice of half medium fresh lemon
pinch of cayenne pepper
fresh ground black pepper
1/4 teaspoon salt
Mix all ingredients in a bowl, and serve with your favorite sliced bread, crackers, or pita. Wasn’t that easy? Enjoy !!! (By the way, in case you were wondering, that is an accidental heart decoration in the middle. It’s a grape tomato cut in half and the way I positioned it came out to be a heart. Possibly because today is dad’s birthday, and I am thinking of him posting this recipe, since crab meat was his favorite). :o)
