The Ranchero Spinach and Egg Burrito

This is for all you breakfast burrito lovers out there. Easy to make, low fat, and good !!! This recipe is for one person. Multiply as needed. Here we go …..
1 egg, beaten
1/4 cup Mexican shredded cheese blend, split in half
1/2 cup baby spinach leaves
1 tablespoon of your favorite salsa
1 whole wheat tortilla, (about 1 ounce)
non stick cooking spray
non stick pan
spatula
 
Spray non stick pan and put on medium heat. Cook your beaten egg for about 2 minutes, making scrambled eggs. Remove from heat. On a plate, place your tortilla, sprinkle half of your cheese blend on tortilla, then top with egg, spinach, salsa, and rest of cheese. Fold bottom of tortilla towards the middle, then take part of each side, kind of like putting a coat on, and close it as best as you can. Clean your non stick pan and reuse it to now to make the outside of the tortilla crispy. Spray pan again with non stick spray, and put on medium heat. Seamed side down (where the two flaps meet), carefully place the burrito into the pan. Cook for about 1 minute, then flip over carefully using a spatula, and cook for another minute. That’s it !!! Enjoy !!! Ole’ !!!
